Did you know that enjoying red meat can be good for your body and your brain? Red meat contains an impressive bundle of nutrients which are vital for brain function. In fact the National Health & Medical Research Council's Dietary Guidelines for Australians recommend that we include red meat 3-4 times a week in our diets, otherwise high iron replacement foods are needed.

  Kids' favourite meals  
 

Kids certainly have their favourite meals, like spaghetti bolognaise, beef rissoles and tacos. Here's an idea...get the kids to help cook their favourite dishes, and they'll love them even more.

Little ones like to touch and feel the food, so you could ask them to help with beef taco toppings. Have them combine grated carrot and lettuce to sprinkle on top of tacos. Six year olds and up can make an easy pizza using leftover bolognaise sauce, grated cheese and a pre-made pizza base. Older children can easily make beef or lamb skewers. Teenagers can make a bolognaise sauce, and even turn it into a yummy cottage pie.

The fast and easy technique of pan-frying is a great way to cook beef and lamb, and it's in fact healthier than it sounds. By using red meat, brushing the meat lightly with oil (instead of adding oil in the pan) and cooking it in a preheated pan, you'll have a quick and healthy meal. Q I'd like to know how to make a really good beef stock. I've heard it's a time consuming process. Are there any shortcuts?

A It is true stock does take a little time to make, but time is its major ingredient. You can go about other things as your stock simmers away and the richness from the meat and bones slowly relinquish their flavours.

Making your own stock isn't difficult, a few easy steps to get it started and the job's just about done. You will be surprised at how easy to make and how deliciously good home-made stock can be.If you don't have time you can pick up a packet of pre-made beef stock from the supermarket.
